Black Bottom Cupcakes

Yesterday was the hottest day we've had yet this year, so what's the logical thing to do? Bake!

I got this recipe from a friend of my sister-in-law.  It's a chocolate cupcake with a cream cheese and chocolate chip centre. Yummy!


Black Bottom Cupcakes

Chocolate batter:

1/2 Cup soft butter
1 1/2 Cups white sugar
2 eggs
1/2 Cup cocoa
1 1/4 Cups milk
1 Tbsp. vanilla
1/2 tsp salt
1 1/2 tsp baking powder
1 3/4 Cups white flour

I'm not one for fiddling with following specific instructions like alternating wet & dry ingredients, blah, blah, blah...  So, I cream the butter & sugar, then add the eggs and mix, then just throw the rest in together and mix the batter for 2-3 minutes.

Cream Cheese filling:

1 pkg. (8 oz) cream cheese - softened
1/3 Cup white sugar
1 egg
6 oz. chocolate chips

Cream first three ingredients together and then stir in the chocolate chips.

Fill cupcake holders 3/4 full with chocolate batter.  Then spoon on between 1 and 1.5 Tbsp. of cream cheese batter and bake at 350° for 20-25 minutes.
