Cashew Chicken
This is an easy favourite and was quick to throw together after getting home later than I would have liked tonight.
Cashew Chicken
3-4 chicken breasts, cubed
1 large red pepper - cut into 1 inch pieces
3 Tbsp. olive oil
4 cloves minced garlic
2 Tbsp. Kikkoman Soy Sauce
2 tsp. lime juice
1-3 tsp. Sambal Oelek chili sauce
2/3 cup - 1 cup cashews
Salt to taste
Citrus juice to taste (5 Alive, orange juice, whatever you have on hand), approximately 3 tbsp.
Heat oil in wok pan, add garlic and fry for 30 seconds before adding cubed chicken. Cook through, then add remainder of ingredients and cook until pepper is just tender. Serve over rice.
Dessert was Ataulfo mangoes, which we've been eating like crazy, as they are one of my favourite fruits of all time. The best way to eat them is over the sink, with the juice streaming down to your elbows!
