Cherry Almond Cake

I got this recipe from a woman that I worked with at Hillcrest Church.  It's a simple recipe and so delicious, a perfect potluck contribution.  The cherry and almond flavours are a natural pairing.  I've had several requests for the recipe, so here it is:


Cherry Almond Cake

1 cup of butter
2 cups of sugar
3 cups of flour
4 eggs
1 tsp. pure vanilla extract
1.5 tsp. pure almond extract
1 can of cherry pie filling, or you can make your own if you have a sour cherry tree.


Cream together butter, sugar, vanilla and almond extract.  Add eggs one at a time.  Blend in flour.  Spread 2/3 of the mixture over the bottom of a large greased sheet pan.  Cover with the cherries and top with blobs of the remaining batter.  Bake at 350 degrees for 40 minutes.
