Homemade Bean & Cheese Burritos

These are easy to make, freeze well, and are super-handy for lunches and after school snacks.

This is what you'll need:

  • 1 can of refried beans
  • 1/3 cup of your favourite kind of salsa - I use homemade
  • 1/4 cup softened cream cheese
  • 10 large soft tortillas
  • shredded cheese
Combine first three ingredients.  Spread over tortilla and sprinkle with cheese, like this:


Roll as you would any wrap, and slice in half.  At this point you can either microwave for 30 seconds and eat them, or wrap them individually in cling wrap and put them in the freezer.

  1. Are the pickles homemade? I think I might have to make some of these for when I'm uninspired to make lunch. We don't have a microwave, but i bet they'd do just fine in a toaster oven.
