It was so nice on Monday to not have to rush around getting out the door right away in the morning. Of course the kids still got up too early, but they played/fought in their room. When I finally rolled out of bed at 8 am I decided that rather than the usual cereal or toaster waffles, I would make baked oatmeal. This is a unique recipe that I got from the camp that I went to for 10 years on the Saskatchewan side of the Cypress Hills. It's almost like an oatmeal breakfast cake.
Baked Oatmeal - Cypress Bible Camp
4 cups quick oats
1 cup brown sugar
1 Tbsp. baking powder
1/2 tsp. salt - the original recipe calls for 1/2 Tbsp. of salt, but that seems like too much so I cut it back.
3/4 cup oil
1 cup + 2 Tbsp. milk
4 eggs
Mix together dry ingredients and then add and combine the wet ingredients. Pour into a lightly greased 9"x13" pan. Bake at 350° for 45 min. or until the edges begin to brown and look slightly crispy. Serve hot with maple syrup.
